PREPARE ZUCCHINI :
- cut ends off of zucchini
- slice into long and thin “noodles” (see above pictures)
- cook in microwave for 2mn and squeeze/pat out moisture.
MAKE MARINARA SAUCE:
- cook down stewed tomatoes
- with fresh minced garlic (roughly one toe, more to taste)
- fresh basil chiffonade
- italian seasoning
- dash of marjoram
- dash crushed red pepper
- small can of tomato paste
PREPARE TURKEY(ish):
- reconstitue according to package
- cook down with onion powder, garlic powder, and black pepper

LAYER:
- in an oven safe 9x13 pan:
- bottom layer of just tomato paste
- zucchini noodles
- cottage cheese
- mozzarella
- ground turkey
- spinach
- carrot
- mushroom
- keep layering until ingredients are gone. top layerfinish with sauce, mozzarella and a sprinkle of parm.
- Bake at 350 till bubbly and cheese is a little golden.
- Through out process zucchini will give off liquid, check occasionally and drain.
